These Coratina Olives were hand-plucked from trees and processed using state-of-the-art cold extraction technology creating a first pressed, Extra Virgin Coratina Olive Oil. Coratina EVOO is characterized as robust and bitter and is also touted for its high level of polyphenols and other antioxidants. Finally, the high phenolic content, along with the triglyceride composition, contributes to the exceptional oxidation stability of the Jaypore Olives Coratina extra-virgin olive oil.

The current batch is the produce of HARVEST- OCTOBER 2025.

The coratina olive oil I received is superior to standard extra virgin olive oils found in the market. However, it does not possess the characteristic bitterness and pungency typically associated with authentic Italian coratina olive oil.
